BACKGROUND STORY
In 1992, Mary, a 70-year-old farmer, inherited a farm with 465 coffee trees. Despite her initial reluctance due to past experiences where men mismanaged coffee earnings, she expanded the farm to 1,000 trees. Frustrated by delayed payments, she considered uprooting her crops, but her husband suggested they build their own washing station. By 1996, Mary was fully in charge, and her farm became a community model. Her innovative methods, like using rice husks as manure, helped the community win the Florida Coffee Awards, with her trees producing 30 kgs each. Mary’s leadership transformed her farm and inspired those around her.
PROCESSING METHOD USED
Washed coffee processing method, whereby only red ripe cherries are picked, pulped the same day, fermented for 24- 72 hours depending on the temperatures and altitude, washed thoroughly with clean water and dried under raised African beds, controlled temperatures and monitored moisture content to avoid over-drying that might affect the cup quality of beans and cup profile.
